Anyone who says they haven’t got time to make breakfast is lying! My vanilla latte overnight oats couldn’t be simpler and are best made the night before, ready for a grab-and-go breakfast the next morning.

The oats are mixed with coffee and vanilla and naturally sweetened with banana and cocoa nibs to keep your sweet tooth happy. The addition of chia seeds gives the overnight oats a thick and creamy texture, similar to a chia pudding.

  • No cooking is required. Left overnight in the fridge, the oats will absorb the milk and soften, ready to eat the next day.
  • Get a caffeine boost: The ‘shot’ of coffee acts as the perfect pick-me up, while the banana and vanilla satisfy any cravings for chocolate or sugar.
  • Think ahead: The overnight oats fit into a small container, which you can take with you to work or on the train. Just don’t forget to bring a spoon with you (I’ve made that mistake before!).

Vanilla latte overnight oats

Ingredients

60g rolled porridge oats
1 banana (1/2 mashed, 1/2 sliced)
1 tsp cacao nibs
1 tsp coffee extract
1/2 tsp vanilla bean paste
1/2 tsp ground sweet cinnamon
1/2 tbsp chia seeds
180ml semi-skimmed milk

To serve
1 square of dark chocolate, grated (optional)

Instructions

Step 1
Mix together the porridge oats, mashed banana, cacao nibs, coffee extract, vanilla bean paste, cinnamon and chia seeds in a bowl.

Step 2
Stir in the milk and pour into a jar or container.

Step 3
Seal and refrigerate overnight. Serve topped with the banana slices and a grating of dark chocolate.

Most supermarkets stock coffee extract in the baking aisle. If you can’t find it, simply replace the same amount of extract for instant coffee, mixed with a little water.
