Who says you can’t have dessert for breakfast? These low fat, high protein yoghurt parfaits are super simple to make and are embellished with honey, cinnamon and ginger.

This is a trio I never seem to tire of: apples, cinnamon and ginger. It’s a classic combination and one I’ve relied on many times when making porridge, crumble or strudel.

All three dishes are what you might bookmark for the winter months, so this recipe is one for the summer.

The parfaits are layered with Skyr yoghurt, raisins and caramelised apples, which have been coated in a ginger and cinnamon spice mix. Top with toasted walnuts and a drizzle of honey for a light and healthy breakfast.

Tips & Notes To Know

  • Use tart, crisp apples: Granny Smith, Pink Lady or Braeburn apples hold their shape and give that perfect sweet-sour balance.
  • Keep the skin on: Peeling the apple skin off means throwing away most of the fibre.

Ingredients

25g walnuts, roughly chopped
Knob of butter
2 eating apples, skin on
40g raisins
1/2 tsp ground sweet cinnamon
1/4 tsp ground ginger
Pinch of nutmeg
Runny honey, to drizzle
200g Skyr yoghurt

Instructions

Step 1
Preheat the oven to 180C. Spread the walnuts out on a lined baking tray and roast in the oven, shaking occasionally, until nicely toasted; about 10-12 minutes.

Step 2
Meanwhile, quarter and core the apples, then thinly slice into wedges. Heat a knob of butter in a saucepan and add the apples and raisins. Sprinkle with the cinnamon, ginger and nutmeg and add a splash of water and a drizzle of honey; about one teaspoon.

Step 3
Cook the apples over a medium heat for 6-8 minutes, turning occasionally, until slightly softened and caramelised. Leave to cool slightly for a few minutes.

Step 4
Divide half the Skyr yoghurt between glasses and top with the caramelised apples and raisins. Repeat the layers again, finishing with a drizzle of the apple juices. Top with the toasted walnuts just before serving.

What Is Skyr?

Skyr is a super healthy Icelandic yoghurt that is fat free, low in sugar, and packed with protein and probiotics. It has a rich and creamy texture similar to Greek yoghurt, but with a milder, slightly tart flavour.

Around four cups of skimmed cow’s milk is required to produce a cup of Skyr, which is pasteurised, has live cultures added, and is then strained.

One serving (100g) contains between 9-11g of protein depending on brand. You can find Arla Skyr in all major supermarkets.

Can I Substitute Honey For Maple Syrup?

Maple syrup is not quite as sweet as honey, so you may want to use slightly more than the amount of honey dictated in the recipe. However, they are basically like for like with the only major difference being the price.

I can categorically say I have perfected the art of making naan breads without using a tandoor oven! These garlic and coriander beauties are the perfect accompaniment to any curry! 

My trick is to pop the yeasted dough in a bowl covered with a tea towel and to place it in the oven on the top shelf with a jug of boiling hot water below. The steam ensures you get a good rise and creates little air bubbles which are vital to achieving that fluffy texture when you tear the naan apart. Introducing my next level Lancashire hotpot! A who Introducing my next level Lancashire hotpot! A whole lamb shoulder slow cooked with red onion, garlic, rainbow carrots and plenty of herbs for 4 hours in the oven. The meat is then shredded and sandwiched between sliced potatoes, topped with a little grating of parmesan. The bottom layer soaks up all the juices from the supercharged lamb jus, while the top layer turns golden and crisp. 

It’s a proper crowd pleaser and a few clever hacks help to cut the saturated fat and ramp up the fibre content. Need some inspiration to take your meat free Monday to next level? This rich and oozy risotto is the perfect winter warmer and heroes two underrated root vegetables, Jerusalem artichokes and parsnips. 

Both are bang in season right now and are so incredibly versatile. Here, I’ve roasted baby parsnips, baked some artichoke crisps, and whipped up an artichoke purée which is stirred into the risotto. It’s a little time consuming (show me a risotto recipe which isn’t!) but it’s so worth the time and effort.

What’s not to love about using a slow cooker? Chuck all the ingredients in before you start work and then you’ve got a readymade dinner for when you clock off!

Ok, so I had to do a bit to bring it all together (the parmesan & thyme crisps are a must try) but it takes the stress out of cooking everything from scratch when you’ve planned ahead. Btw, fresh egg pasta tastes so much better than dried pasta. It also takes less time to cook which is a bonus! As always, you can find the full recipe on my website (link in bio)!
