Whenever I think of Bounty Milk Chocolate, I think of my dad who eats all the miniatures in a tub of Celebrations. This comforting recipe combines two of his favourite things: chocolate and coconut in three different forms. The coconut milk drink makes the porridge vegan friendly, while the dairy-free cacao powder and cacao nibs adds a touch of richness and decadence to the oats. Simply mix all the ingredients together the night before and you’ll have a healthy breakfast ready and waiting for you in the fridge when you wake up. Make ahead: You can prepare a big batch of overnight oats in advance and they’ll last for 3-4 days in the fridge. Just divide the mixture between individual jars or containers, so you (and the kids) can grab a portion before you dash out of the door in the morning. Use old-fashioned rolled oats: Avoid instant oats (too mushy) or steel-cut (too chewy). Rolled oats give the best texture after soaking.
